Eccomi di ritorno…dopo un’assenza un po’ troppo lunga in effetti. Mi scuso con voi tutti e per farmi perdonare una sontuosa e golosissima torta al cioccolato, l’idea delle apine della decorazione l’ho presa da Feast di Nigella Lawson…attinente no?
Grazie di cuore per aver continutato a visitare il blog nonostante il sempiterno ed ormai famigerato biscuit e grazie per i commenti che avete lasciato.
Ingredienti
per il pan di spagna
- 150 gr. di zucchero
- 135 gr di farina
- 6 uova
- 15 gr di cacao
- 1 bustina di vanillina
- per la bagna
- 200ml di acqua
- 100 gr di zucchero
- rhum
per la farcitura e la copertura
- 400 gr di cioccolato fondente
- 400 ml di panna fresca
per le apine
- 50 gr marzapane
- mandorle in scaglie
Per il pan di spagna montate le uova intere con lo zucchero per una buona decina di minuti, devono diventare una massa spumosa e chiara. Aggiungete la farina e il cacao setacciati insieme ed amalgamate il tutto delicatamente, mescolando dall’alto in basso e cercando di non smontare l’impasto. Versate il tutto in una teglia imburrata ed infarinata ed infornate in forno preriscaldato a 180° per una quarantina di minuti. In genere preferisco preparare il pan di spagna il giorno prima di farcirlo, ma nulla vieta di farcirlo dopo averlo fatto completamente raffreddare.
Per la ganache sciogliete il cioccolato con la panna a bagnomaria e lasciate completamente raffreddare il composto. Prelevate poco più della metà del composto di cioccolato e panna e montatelo con le fruste fino ad ottenere una sorta di mousse.
Per la bagna fate uno sciroppo con l’acqua e lo zucchero, fuori dal fuoco aggiungete il rhum e lasciate raffreddare.
Tagliate il pan di spagna in due dischi, bagnatelo con lo sciroppo e farcitelo con la ganache.
Ricomponete il dolce e spalmatelo con la ganache anche esternamente.
Ponete di nuovo sul fuoco la parte di cioccolato e panna lasciata da parte fino a renderlo un composto di nuovo fluido e con esso glassate la torta.
Gran finale…con il marzapane modellate il corpo delle apine, sistemate le alucce (le mandorle) e rigate il corpicino con un pò di glassa rimasta.
Che incredibile meraviglia!

a tutti i frequentatori dell’ape maia..ieri sono passato dall’alveare e mi sono portato via un quarto di questa delizia al cioccolato. poi sono tornato a casa e con un bel cucchiaino ( piccolo per gustarla meglio) l’ho finita. che delizia!! l’unico appunto forse è che doveva essere bagnata un poco in più..ma alla fine non è rimasta nemmeno una briciola!!Grande ape.
